Ingredients
2 cups all-purpose flour
3/4 cup powdered sugar
1 cup unsalted butter
4 large eggs
2 cups granulated sugar
1/2 cup all-purpose flour
1/2 teaspoon salt
4 cups diced rhubarb
Instructions
1. Preheat your oven to 350°F (177°C). Grease an 8×8 or 13×9 inch baking pan.
2. To make the crust, combine 2 cups of flour with 3/4 cup powdered sugar in a bowl. Cut in 1 cup of unsalted butter until the mixture is crumbly.
3. Press the crust mixture evenly into the prepared baking pan.
4. Bake the crust for about 15 minutes until it’s pale but set. Remove from oven.
5. In a new bowl, whisk together 4 large eggs, 2 cups of sugar, 1/2 cup flour, and 1/2 teaspoon salt until smooth.
6. Fold in 4 cups of diced rhubarb into the egg mixture.
7. Pour the rhubarb filling over the hot crust.
8. Bake for an additional 35-45 minutes or until the edges are lightly browned.
9. Allow the bars to cool completely before cutting, using a freezer for 15 minutes for easier slicing if desired.
