Ingredients

– 1½ cups all-purpose flour for the crust

– ¾ cup cold butter, cubed for the crust

– ¼ cup powdered sugar for the crust

– 3 large eggs, lightly beaten for the filling

– 2 cups white sugar for the filling; can be reduced to 1 cup for less sweetness

– ½ cup all-purpose flour for the filling

– ½ teaspoon salt for the filling

– 4 cups diced rhubarb for the filling


Instructions

1-First, preheat the oven to 350°F (175°C) and grease a 9 x 13 inch baking pan. In a medium bowl, combine 1½ cups all-purpose flour and ¼ cup powdered sugar, then cut in ¾ cup cold cubed butter until the mixture forms coarse crumbs. Press this crumb mixture evenly into the prepared pan and bake for 10-12 minutes until lightly browned.

2-While the crust bakes, prepare the filling by mixing 3 lightly beaten eggs, 2 cups white sugar, ½ cup all-purpose flour, and ½ teaspoon salt in another bowl. Gently stir in 4 cups diced rhubarb to combine everything well. Once the crust is ready, pour the filling over it, then reduce the oven temperature to 325°F (165°C) and bake for 30-35 minutes until the filling is set and no longer jiggly.

3-After baking, let the bars cool for 30 minutes at room temperature before refrigerating them until fully chilled. This step ensures clean slices and the best texture.
