1-Preparation Phase: Before turning on the stove, measure all your ingredients and have them ready. This mise en place approach prevents scrambling for ingredients mid-recipe and ensures smooth cooking. Mince the garlic finely so it distributes evenly throughout the sauce. Grate your Parmesan cheese fresh from a block for the best melting quality and flavor. If your cream cheese is cold from the refrigerator, soften it quickly by microwaving 2 cups of water, then placing the cream cheese in the microwave with the door closed for about 5 minutes. 2-Creating the Flavor Base: Start by melting the butter in a large high-walled skillet over medium-low heat. 3-Building the Sauce: Now stir in the tomato paste, onion powder, dried basil, dried oregano, and mustard powder. All those dried herbs and spices bloom in the warm fat, releasing their essential oils and intensifying the flavor. Here comes the most important technique for a smooth homemade ravioli sauce: add the chicken broth gradually in small splashes while stirring continuously.
