Ingredients

– 3 large eggs for cake base

– 1/2 cup sugar for cake base

– 1/2 cup flour for cake base

– 1 1/4 cups raspberries for mousse

– 1/4 cup sugar for mousse

– 1 cup heavy cream for decoration

– basil for decoration


Instructions

1-First: preheat the oven to 350ยฐF (175ยฐC) and butter a cake or springform pan, lining the bottom with parchment paper. Beat the 3 large eggs with 1/2 cup sugar on high speed for 6-7 minutes until fluffy, then gently fold in 1/2 cup all-purpose flour without overmixing. Pour the batter into the pan and bake for 23 minutes, letting it cool to room temperature or chilling in the freezer for 10 minutes.

2-Next: for the mousse, cook 1 1/4 cups of raspberries with 1/4 cup sugar in a saucepan until soft, then strain to remove seeds. Return the juice to the pan, add 1 tablespoon fresh lemon juice and 1/2 tablespoon unflavored gelatin, heating gently until the gelatin dissolves. Cool this mixture in the refrigerator, but donโ€™t let it set fully.

3-Whipping and Assembling: Whip 1 cup of heavy whipping cream with 1 1/2 tablespoons powdered sugar to firm peaks and chill it. Fold the raspberry mixture gradually into the whipped cream to keep it light, then spread over the cooled cake and refrigerate for 2-3 hours or overnight. Finally, for decoration, whip another 1 cup heavy cream with 1 1/2 tablespoons powdered sugar to firm peaks, pipe it around the edges, and top with 1/2 to 1 cup raspberries plus 10 small basil leaves if you like.
