Instructions

1-Preheat the oven: preheat the oven to 350Β°F (175Β°C) and prepare a 10Γ—15 inch jelly roll pan by lightly greasing it and lining with parchment paper.

2-Mix dry ingredients: In one bowl, mix the dry ingredients: 3/4 cup all-purpose flour, 1/2 teaspoon salt, 1 teaspoon baking soda, 1 teaspoon cinnamon, and 1 teaspoon pumpkin pie spice.

3-Mix wet ingredients: In another bowl, whisk together the wet ingredients: 3 large eggs, 2/3 cup granulated or brown sugar, 1 teaspoon vanilla extract, and 1 cup canned pumpkin until smooth and creamy.

4-Combine mixtures and bake: Combine the wet and dry mixtures gently, then spread the batter evenly in the pan. Bake for 12-15 minutes, or until a toothpick comes out clean.

5-Roll and cool cake: Once done, remove the cake and roll it up immediately with the parchment paper to avoid cracking, then let it cool completely.

6-Prepare filling: For the filling, blend 8 ounces softened cream cheese, 2 tablespoons softened butter, 1 teaspoon vanilla extract, and 1 cup powdered sugar until smooth.

7-Spread filling and re-roll: Unroll the cooled cake, spread the filling evenly, and roll it back up.
