Ingredients

– 2 tablespoons butter

– 2 cloves garlic

– 1 tablespoon fresh thyme

– 9 sage leaves

– 1 pound elbow macaroni pasta

– 1 cup canned pumpkin

– 3 ounces cream cheese

– 1 cup shredded cheddar cheese

– 1 1/2 cups shredded gouda cheese

– 1 1/2 cups milk

– 1 teaspoon onion powder

– 1 teaspoon smoked paprika

– 1 teaspoon cayenne pepper

– 1/4 teaspoon ground nutmeg

– 1/4 teaspoon salt (plus 1 1/2 teaspoons salt for boiling pasta)

– Freshly ground black pepper (to taste)


Instructions

1-Melt the butter with garlic, thyme, and sage in a large pot over medium heat. Brown the butter for 3 to 5 minutes, then remove and set aside the sage leaves.

2-Add the pasta to the pot, toss it with the butter mixture, and pour in 4 cups of water. Bring it to a boil and cook the pasta for 8 minutes, stirring now and then remember not to drain it!

3-Stir in the milk, cream cheese, and pumpkin, then cook for 4 to 5 minutes until the cream cheese melts and the pasta is al dente.

4-Discard the garlic cloves or mince them and add back to the pot. Mix in the cheddar cheese, gouda cheese, onion powder, smoked paprika, cayenne pepper, and ground nutmeg until the sauce turns creamy.

5-If the mixture is too thick, thin it with 1/4 cup of milk or water. Taste and adjust the salt and pepper as needed.

6-Serve it up warm, topped with the reserved sage leaves, a bit of grated nutmeg, and black pepper. Feel free to add breadcrumbs or parmesan as a garnish for extra crunch.

Notes

🌿 Garnish with fresh sage; rosemary also works or omit if unavailable.
