Ingredients

– 3/4 cup half and half Adds creaminess and helps create the egg custard mixture

– 1/2 cup pumpkin puree (canned or fresh) Moisture, creaminess, and rich pumpkin flavor

– 4 eggs Bind the ingredients and provide protein

– 2 1/2 tablespoons packed light brown sugar Natural sweetener that balances spices

– 1 1/2 teaspoons vanilla extract

– 1 1/4 teaspoons ground cinnamon Add warm spice enhancing the pumpkin flavor

– 1/2 teaspoon ground nutmeg Add warm spice enhancing the pumpkin flavor

– 1/4 teaspoon ground ginger Add warm spice enhancing the pumpkin flavor

– 1/8 teaspoon ground cloves Add warm spice enhancing the pumpkin flavor

– 9 slices of hearty white bread such as rustic French bread or brioche, sliced 1 inch thick The base for soaking the custard

– 2 to 3 tablespoons of butter for cooking on the griddle

Instructions

1-Prepare the Equipment: Preheat the oven to 225Β°F and an electric griddle to 350Β°F. Alternatively, you can use a non-stick skillet over medium heat.

2-Make the Custard Mixture: Whisk together pumpkin puree, eggs, brown sugar, vanilla, cinnamon, nutmeg, ginger, and cloves in a shallow dish. Then add half and half and mix thoroughly until combined.

3-Soak the Bread: Dip each bread slice into the mixture, soaking one side then the other. Let the slices soak for about one minute per side to ensure proper absorption without oversaturation.

4-Cook the French Toast: Butter the griddle, then place the soaked slices on it. Cook until golden brown on one side, then flip, add more butter, and cook the other side until golden brown.

5-Keep Warm: Transfer the cooked slices to a warm oven rack for up to 10 minutes to keep warm and finish cooking if needed.

6-Serve: Serve warm with maple syrup or preferred toppings. Consider adding toasted nuts, whipped cream, or cinnamon honey butter for extra flavor.

Notes

🍞 Use day-old or sturdy bread for better custard absorption.
⏳ Soak slices about one minute per side to ensure full flavor and texture.
