Instructions

1-First: thaw the shortcrust pastry sheets completely. Then, use a large cutter to cut out 30 gingerbread shapes from the pastry. Lay out half of these shapes on trays lined with parchment paper.

2-Brushing and filling: Brush the edges of the laid-out shapes with the egg wash made from the whisked egg and water. Fill the centers with raspberry jam, then press the remaining shapes on top and crimp the edges with a fork to seal. Brush the tops with egg wash again, cut an X in the belly area of each doll, and refrigerate for 20-30 minutes.

3-Baking: Preheat your oven to 190Β°C (380Β°F) and bake the dolls for 20 minutes or until they turn golden. While they bake, roll out the yellow or black gum paste to create button eyes and shape the red gum paste into hearts, letting them dry fully.

4-Final Touches: Once baked, mix the royal icing with a few drops of black food colouring. Use this to pipe X’s on the hands and feet of the dolls, attach the dried eyes and hearts, pipe stitches around the heart, and insert half toothpicks into each doll for easy handling.
