Ingredients

– 2 tablespoons olive oil

– 8 ounces thinly sliced shiitake mushrooms

– 2 tablespoons grated or minced fresh ginger

– 4 cloves pressed or minced garlic

– 6 cups vegetable broth

– 2 tablespoons soy sauce

– 16 to 20 ounces frozen potstickers

– 5 thinly sliced scallions

– 3 baby bok choy with trimmed ends and separated leaves

– 2 teaspoons toasted sesame oil

– Freshly-ground black pepper to taste


Instructions

1-First, gather all ingredients, including the frozen potstickers, vegetable broth, and vegetables like shiitake mushrooms and baby bok choy. Prep by washing and chopping the bok choy, slicing the mushrooms, and mincing the garlic and ginger.

2-In a large pot, heat 1 tablespoon of olive oil over medium heat. SautΓ© the thinly sliced shiitake mushrooms until they turn browned and fragrant, which takes about 3-4 minutes.

3-Add the remaining 1 tablespoon of olive oil, then stir in the 4 cloves of pressed or minced garlic and 2 tablespoons of grated or minced fresh ginger. Cook for another 1-2 minutes until everything smells amazing.

4-Pour in 6 cups of vegetable broth and 2 tablespoons of soy sauce, then bring the mixture to a boil.

5-Once boiling, add the 16 to 20 ounces of frozen potstickers, half of the 5 thinly sliced scallions, and the 3 baby bok choy with trimmed ends. Cook for 3 to 4 minutes until the potstickers are done and the veggies are tender.

6-Stir in 2 teaspoons of toasted sesame oil and freshly-ground black pepper to taste. Adjust the seasoning as needed, then serve garnished with the remaining scallions and optional toppings like chili crisp or sesame seeds.
