Ingredients

– 16 ounces small potatoes

– 2 tablespoons olive oil

– 10 ounces mushrooms

– 3 minced garlic cloves

– 1/4 teaspoon table salt

– 1 cup chicken stock

– 1/2 cup heavy whipping cream

– 3 tablespoons fresh thyme


Instructions

1-First, boil the 16 ounces of small potatoes (halved if larger) in a large pot of water for 15-20 minutes until tender, then drain them carefully.

2-While the potatoes cook, heat 2 tablespoons of olive oil in a large skillet over medium heat and add the 10 ounces of mushrooms (halved) and 3 minced garlic cloves, sprinkling with 1/4 teaspoon of table salt, and cook for about 4 minutes until fragrant.

3-Next, add 1 cup of chicken stock to the skillet, bring it to a boil, then reduce the heat to medium-low, cover, and simmer for 15 minutes.

4-After that, increase the heat to high and cook uncovered for 5 minutes until the stock reduces by half, concentrating those flavors.

5-Now, add the cooked potatoes, 1/2 cup of heavy whipping cream, and 3 tablespoons of fresh thyme to the skillet. Cook on high while stirring for 2-4 minutes until the sauce thickens and coats everything nicely.

6-Remove from heat, adjust salt as needed, and let it cool for 10 minutes to thicken the sauce further. Stir again, garnish with extra fresh thyme, and serve warm.
