6 strips uncooked bacon, cut into small pieces

3 tablespoons butter (unsalted or salted)

1 medium yellow onion, chopped (about 1.5 cups or 200g)

3 large garlic cloves, minced

1/3 cup all-purpose flour (42g)

2 Β½ pounds gold potatoes, peeled and diced into pieces no larger than 1 inch (about 6 large potatoes or 1.15kg)

4 cups chicken broth (945ml)

2 cups milk (475ml)

2/3 cup heavy cream (155ml)

1 Β½ teaspoons salt (adjust according to broth)

1 teaspoon ground black pepper

1/4 to 1/2 teaspoon ancho chili powder (start with 1/4 teaspoon and taste)

2/3 cup sour cream (160g)

Instructions

1-Step 1: Cook the bacon pieces in your pot over medium heat until they’re crisp, which takes about 5-7 minutes. Once done, scoop them out and set aside, but keep that flavorful fat in the pot. It’s like saving the best part for later!

2-Step 2: Add the butter and chopped onion to the pot, cooking until the onions soften, around 3-5 minutes. Then, toss in the minced garlic and stir for about 30 seconds until it smells amazing. This builds a solid flavor base that’s hard to beat.

3-Step 3: Sprinkle in the flour and stir until it’s smooth and mixed in. Now, add the diced potatoes, chicken broth, milk, heavy cream, salt, pepper, and ancho chili powder. Give it all a good stir to combine everything nicely.

4-Step 4: Bring the mixture to a boil and let it cook until the potatoes are tender, about 10 minutes. Reduce the heat, then take out half the soup and puree it until smooth. Return it to the pot, stir in the sour cream and reserved bacon, and simmer for another 15 minutes. Voila, you’re almost there!
