Ingredients
– 6 strips uncooked bacon, cut into small pieces
– 3 tablespoons butter
– 1 medium yellow onion, chopped (about 1.5 cups or 200g)
– 3 large garlic cloves, minced
– β cup (42g) flour
– 2 Β½ pounds (about 6 large or 1.15kg) gold potatoes, peeled and diced into pieces no larger than 1 inch
– 4 cups (945ml) chicken broth
– 2 cups (475ml) milk
– β cup (155ml) heavy cream
– 1 Β½ teaspoons salt (adjust to taste)
– 1 teaspoon ground pepper
– ΒΌ to Β½ teaspoon ancho chili powder
– β cup (160g) sour cream
Instructions
1-First, start by cooking 6 strips of uncooked bacon, cut into small pieces, in a large pot over medium heat until theyβre crisp. Once done, remove the bacon and set it aside, but keep that flavorful fat in the pot itβs the secret to that rich base!
2-Next, add 3 tablespoons of butter and the chopped onion (about 1.5 cups or 200g) to the pot. Let it cook for 3-5 minutes until the onion is tender and smells amazing. Then, toss in the 3 large minced garlic cloves and cook for another 30 seconds to wake up those flavors.
3-Now, sprinkle in β cup (42g) of flour and stir until itβs smooth and combined. This helps thicken everything up nicely. Add the diced gold potatoes (2 Β½ pounds or about 6 large, cut no larger than 1 inch), 4 cups (945ml) of chicken broth, 2 cups (475ml) of milk, β cup (155ml) of heavy cream, 1 Β½ teaspoons salt, 1 teaspoon ground pepper, and ΒΌ to Β½ teaspoon ancho chili powder. Stir well and bring it to a boil, then let it simmer for about 10 minutes until the potatoes are tender.
4-Remove half of the soup and puree it until smooth using a blender or immersion blender.
5-Return the pureed mixture to the pot and stir in the β cup (160g) of sour cream along with the reserved bacon.
6-Simmer for another 15 minutes to blend the flavors, then serve hot with optional toppings like shredded cheddar cheese or chives.
