– 1 tablespoon olive oil for searing the pork

– 4 minced garlic cloves for honey garlic glaze

– 1 tablespoon Dijon mustard for tangy sharpness in glaze

– 1 tablespoon olive oil for glaze

– 1 pound Brussels sprouts, halved

– 1 pound butternut squash, cut into 1-inch cubes

– 1 tablespoon olive oil for tossing vegetables

Instructions

1-Preheat your oven: Start by preheating your oven to 375Β°F (190Β°C) to set the stage for roasting that 3-pound pork loin to perfection.

2-Prepare your pork: Rub it with the spice mix of 1 teaspoon sweet paprika, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon dried thyme, 1/2 teaspoon dried rosemary, salt, and freshly ground pepper. This blend creates a savory crust that enhances the meat’s natural taste.

3-Sear the pork: Heat 1 tablespoon olive oil in a skillet over medium-high heat and sear the pork on all sides for about 5 minutes each to lock in the juices and add a golden color.

4-Make the honey garlic glaze: While the pork rests, mix up the honey garlic glaze by combining 4 minced garlic cloves, 1/4 cup honey, 3 tablespoons low-sodium gluten-free soy sauce, 1 tablespoon Dijon mustard, and 1 tablespoon olive oil in a bowl.

5-Prepare the vegetables: Toss your vegetables 1 pound halved Brussels sprouts and 1 pound butternut squash cut into 1-inch cubes in another 1 tablespoon olive oil and arrange them around the pork in a roasting pan.

6-Roast: Pop everything into the oven and roast for 50 to 60 minutes, or until the pork reaches an internal temperature of 145Β°F (63Β°C).

7-Rest and glaze: After roasting, let the pork rest for 10 minutes to keep those juices inside, making each slice extra moist. If you’re adding the glaze, brush it on during the last 10 minutes of cooking for a sticky, flavorful finish.
