Ingredients
– 2 cups all-purpose flour
– 1/8 teaspoon salt
– 2 teaspoons baking powder
– 1/3 cup poppy seeds
– 1 3/4 cups granulated sugar, divided
– 1/2 cup unsalted butter
– 1 cup milk, divided
– 1 teaspoon vanilla extract
– 4 large egg whites
– Powdered sugar for garnishing (optional)
Instructions
1-Begin with preheating the oven to 350°F (175°C) and greasing a bundt pan for easy release. Cream 1/2 cup unsalted butter with 1 1/4 cups granulated sugar until fluffy, then stir in 1/4 cup milk and 1 teaspoon vanilla extract. In another bowl, sift 2 cups all-purpose flour, 1/8 teaspoon salt, and 2 teaspoons baking powder, and mix in 1/3 cup poppy seeds.
2-Alternately add the flour mixture and the remaining 3/4 cup milk to the butter mix, starting and ending with flour, and mix gently. Beat 4 large egg whites to soft peaks, then add the remaining 1/2 cup granulated sugar until stiff peaks form, and fold into the batter. Pour into the pan and bake for 35 to 40 minutes, or until a toothpick is clean. Let it cool before dusting with powdered sugar if you like.
Notes
🥚 Use real egg whites separated when cold and brought to room temperature for the best volume.
🌿 There’s no need to soak the poppy seeds before adding them to the batter.
