Description

🍞 These light, airy popovers rise dramatically in the oven, giving you a fluffy, buttery bite perfect for any meal.

Ingredients

4 large eggs, at room temperature

1 ½ cups (360 ml) whole milk, at room temperature

¾ teaspoon salt

1 ½ cups (190 g) all-purpose flour, spooned and leveled

2 tablespoons (30 g) melted butter, plus extra for greasing the pan


Instructions

1-In a large bowl, whisk the eggs, milk, and salt together until the mixture is smooth and free of streaks.

2-Add the flour and whisk until just combined to avoid overmixing.

3-Whisk in the melted butter until the batter is homogeneous, then let it rest for a few minutes while you preheat the oven.

4-Preheat the oven to 450°F (232°C) and position a rack in the lower third of the oven.

5-Lightly butter the wells of a popover or muffin pan, then place the pan in the hot oven for 2 minutes to heat the wells.

6-Remove the pan carefully and fill each well half-full, about ¼ cup or 60 ml of batter.

7-Bake on the low rack at 450°F for 20 minutes.

8-Without opening the oven door, reduce the temperature to 350°F (177°C) and continue baking for 10 minutes, or until the tops are golden brown.

9-Pierce the tops of the popovers with a knife to release steam, then serve immediately for the best texture.

Notes

🥚 Use eggs and milk that are at room temperature; this helps the batter rise sharply.
🔥 Pre‑heat the pan before adding batter to give the popovers an initial blast of heat for maximum lift.
