1 head garlic

Olive oil (enough to drizzle the garlic)

12 dinner rolls (halved, bottom and top pieces)

1 1½ cups marinara sauce (use less if you prefer a drier slider)

¾ cup shredded mozzarella cheese

¾ cup shredded provolone cheese

¼ cup grated Parmesan cheese (plus an additional ¼ cup for the garlic butter)

½ cup thinly sliced pepperoni

3 Tbsp salted butter (softened)

1 Tbsp chopped fresh sage

2 tsp dried basil

1 tsp dried oregano

1 tsp dried parsley

Pinch chili flakes


Instructions

1-First, roast the garlic: Heat your oven to 400°F (200°C). Cut the top off the garlic head to reveal the cloves, drizzle with olive oil, wrap it tightly in foil, and roast for 40-55 minutes until the cloves turn golden and soft. This step infuses a sweet, mellow taste that’s key to the recipe.

2-Gathering and Assembling Ingredients: While the garlic roasts, prepare the rest. Slice 12 dinner rolls in half and lay the bottoms on a parchment-lined sheet pan. Spread marinara sauce on each bottom half, then add layers of shredded mozzarella, provolone, pepperoni, and half of the grated Parmesan cheese. Top with the roll halves and press gently to hold everything together.

3-Next, make the garlic butter: Once the garlic cools, squeeze the softened cloves into a bowl. Mix in the softened salted butter, the remaining grated Parmesan cheese, chopped fresh sage, dried basil, dried oregano, dried parsley, and a pinch of chili flakes. Mash it all until smooth for a flavorful spread.

4-Baking and Finishing Touches: Spread the garlic-butter mixture over the assembled rolls and cover the pan with foil. Bake at 400°F (200°C) for 10 minutes, then remove the foil and bake another 10 minutes until the cheese melts completely and the tops brown lightly. Finally, brush any extra garlic butter on the hot sliders and serve right away, perhaps with extra marinara for dipping. The total prep takes about 15 minutes, with cooking around 1 hour, making the whole process roughly 1 hour 15 minutes.
