Description

Ingredients

– 2 lb (≈ 900 g) Boneless, skinless chicken breasts

– 25 slices Pepperoni

– 4 oz (≈ 115 g) Fresh mozzarella, sliced into 4 pieces

– 3 cups (≈ 720 ml) Tomato-basil or marinara sauce

– 1 clove (or ½ tsp) Garlic, minced (or garlic powder)

– 1 tsp Italian seasoning

– 2 cups (≈ 200 g) Grated mozzarella cheese

– ¼ cup (≈ 25 g) Grated Parmesan cheese

– Optional Fresh basil or parsley, chopped (for garnish)


Instructions

1-First, set your oven to 400°F (204°C) and lightly oil a 9×13-inch baking pan to prevent sticking that’s your starting point for a smooth cook.

2-Next, butterfly the chicken breasts by slicing each one horizontally through the center, keeping the halves attached like a book, which helps them cook evenly and hold all those yummy fillings.

3-Now, on one side of each opened breast, layer 5 pepperoni slices and one slice of fresh mozzarella for that classic pizza vibe.

4-In a bowl, mix the tomato sauce with minced garlic and Italian seasoning, then spoon about 1 tablespoon of this mixture over each chicken opening to add moisture and flavor.

5-Folding and Baking Steps: Fold the chicken back over the fillings to seal everything in, and arrange the breasts in your prepared pan. Spread the rest of the seasoned sauce over the top of the chicken pieces for even coverage, then sprinkle on the grated mozzarella and Parmesan cheeses, followed by the remaining pepperoni slices.

6-Pop it in the oven and bake for about 25 minutes, or until the chicken hits an internal temperature of 165°F (74°C) and looks perfectly done.

7-Once it’s out, let it rest for a minute, garnish with chopped fresh basil or parsley if you like, and serve it hot your family will love it!
