Ingredients

– 8 ounces cream cheese, room temperature

– 1 cup powdered sugar

– 1 ½ teaspoons vanilla extract

– 8 ounces frozen whipped topping, thawed, divided

– 2 packages (3.4 ounces each) instant pistachio pudding mix

– 2 ½ cups whole milk


Instructions

1-First, preheat your oven to 350°F and spray a 9×13-inch pan with nonstick cooking spray to get things started. Then, in a mixing bowl, combine the finely chopped pistachios, flour, granulated sugar, and butter. Mix on low speed until it forms a crumbly dough, or use two forks if you don’t have a mixer.

2-Next, press that dough evenly into your prepared pan and bake it for 12-15 minutes. Let it cool completely before moving on this step is key for the best texture. Now, beat the cream cheese, powdered sugar, and vanilla extract until smooth, then fold in half of the whipped topping and spread it over the cooled crust.

3-Building the Layers: Whisk the pudding mixes with the milk and let it thicken for about 5 minutes. Spread this over the cream cheese layer, followed by the remaining whipped topping. Chill everything in the fridge for at least 6 hours, and sprinkle the rest of the chopped pistachios on top just before serving to keep them crunchy.
