Ingredients

– 1 cup (120 g) all-purpose flour for the crust structure

– 1/3 cup (40 g) powdered sugar to sweeten the crust

– 1/2 cup (115 g) room temperature butter for a rich, crumbly crust

– 1 cup (200 g) granulated sugar for the filling’s sweetness

– 1/4 cup (30 g) all-purpose flour to thicken the filling

– 3 large eggs to bind the filling together

– Zest of 2 grapefruits for a bright citrus aroma in the filling

– 1/2 cup (120 ml) pink grapefruit juice for the tangy base of the filling

– Optional: Lemon juice to taste for extra tartness if you want it

– Optional: Pink food coloring just a drop or two for visual appeal


Instructions

1-Preheat your oven: preheat your oven to 350Β°F (175Β°C) and lightly grease or line an 11Γ—7-inch (28Γ—18 cm) baking dish with parchment paper for easy removal later.

2-Mix the crust ingredients: 1 cup (120 g) all-purpose flour, 1/3 cup (40 g) powdered sugar, 1/4 teaspoon salt, and 1/2 cup (115 g) room temperature butter until they form a crumbly dough. Press this mixture evenly into your prepared baking dish and bake it for 18-20 minutes, or until it’s golden brown.

3-Whisk together the filling: 1 cup (200 g) granulated sugar, 1/4 cup (30 g) all-purpose flour, 3 large eggs, the zest of 2 grapefruits, and 1/2 cup (120 ml) pink grapefruit juice. If you like, add a bit of lemon juice for extra tang or a drop of pink food coloring for a pretty hue.

4-Finish baking: Once the crust is done, pour the filling over the hot base and pop it back in the oven for another 20 minutes, until the edges are slightly browned and the center is set.

5-Cool and chill: After baking, let the bars cool at room temperature for about one hour, then chill them in the refrigerator for at least 1-2 hours to firm up.

6-Serve: Once chilled, lift the bars out using the parchment paper, cut them into 12 pieces, and dust with powdered sugar before serving a step that adds a sweet finish.
