1 small box instant vanilla pudding mix
1 can (8 oz / 227 g) crushed pineapple with juice
Optional: Maraschino cherries for garnish
Optional: Softened cream cheese (to add to frosting for stability and richness)
Optional: Coconut flakes or chopped nuts such as pecans

Instructions

1. Preheat the oven to 350°F (175°C). Spray a 9 x 13-inch (23 x 33 cm) baking pan with cooking spray.
2. In a large bowl, combine the cake mix, eggs, vegetable oil, and one can of crushed pineapple with juice. Mix well until blended.
3. Pour the batter evenly into the prepared pan. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
4. Allow the cake to cool completely on a wire rack.
5. For the frosting, gently fold together the whipped topping, instant vanilla pudding mix, and the remaining can of crushed pineapple with juice. If desired, fold in softened cream cheese for extra creaminess and stability.
