Instructions

1-Begin by whisking together 2 large eggs, 2 large egg yolks, 0.5 cup canned pineapple juice, 0.5 cup granulated sugar, and 2 tablespoons cornstarch in a large bowl until everything is well combined and the cornstarch dissolves completely.

2-Pour the mixture into a medium saucepan and cook over medium-low heat, stirring constantly with a wooden spoon, until it thickens to a pudding-like consistency, which takes about 7 to 10 minutes.

3-Once thickened, remove from heat and stir in the 2 tablespoons of unsalted butter cut into pieces until fully incorporated for that creamy texture.

4-Strain the curd through a fine-mesh sieve to remove any solids, then transfer it to a bowl.

5-Cover with plastic wrap placed directly on the surface and refrigerate for at least 2 hours or until set.

Notes
