Ingredients
– 1 lb boneless, skinless chicken breast, diced
– 1 tbsp olive oil
– Salt and pepper, to taste
– 1 bell pepper, diced
– 1 can (15 oz) pineapple chunks, drained (reserve ¼ cup of the juice)
– 2 cups cooked white rice
– 2 tbsp soy sauce
– 1 tbsp honey
– ½ tsp garlic powder
– ½ tsp ground ginger
– green onions for garnish
– sesame seeds for garnish
Instructions
1-First, rinse and soak 2 cups of jasmine rice for 15 minutes to make it fluffy, then drain it well.
2-Next, dice 1 lb of boneless chicken thighs into bite-sized pieces and season lightly with salt and pepper.
3-Heat 1 tbsp vegetable oil in a large skillet over medium-high heat and sauté 2 cloves of minced garlic until it’s fragrant and inviting.
4-Now, add the chicken pieces to the skillet and cook for 5-7 minutes until they’re browned and almost done.
5-Stir in 1 cup of pineapple chunks and 1/2 cup of soy sauce to blend the flavors perfectly.
6-Add the drained rice and 2 cups of water, bring it to a boil, then lower the heat to simmer.
7-Cover and cook for 15 minutes until the rice is tender and the liquid is absorbed.
8-Finally, fluff the rice with a fork, taste it, and adjust the seasoning if needed.
