Description

🥗 This vibrant orzo salad blends protein‑packed chicken, creamy avocado, and bright pesto for a balanced, fresh meal.
🍗 The Cajun‑spiced chicken adds a smoky kick, while the tangy mayo‑ketchup dressing ties everything together.


Ingredients

– 1 lb (≈ 450 g) boneless, skinless chicken tenders

– 1 Tbsp olive oil

– 2 Tbsp Cajun seasoning

– 1 lb (≈ 450 g) dry orzo pasta

– ½ cup basil pesto (store-bought or homemade)

– 2 cups shredded lettuce

– 2 roasted bell peppers, sliced

– 1 ½ cups shredded cheddar cheese

– ⅓ cup sun-dried tomatoes, packed in oil, drained

– 1 ripe avocado, diced

– ½ cup mayonnaise

– 1 Tbsp ketchup

– 1 Tbsp lemon juice

– 1 tsp hot sauce

– 1 Tbsp finely chopped dill pickles

– ½ tsp paprika

– ½ tsp onion powder

– ½ tsp garlic powder

– Salt and freshly ground black pepper, to taste


Instructions

1-Season and cook the chicken: Toss the chicken tenders with olive oil, Cajun seasoning, salt, and pepper. Grill or pan-sear over medium-high heat for 10-12 minutes, turning once, until cooked through. Slice or cube the chicken afterward.

2-Prepare the dressing: Combine all dressing ingredients in a jar or bowl and whisk until smooth. Adjust seasoning as needed to get that tangy kick just right.

3-Cook the orzo: Boil the orzo according to package instructions until al dente. Drain and return to the pot, then toss with the basil pesto for a flavorful base.

4-Assemble the salad: In a large mixing bowl, combine the pesto-coated orzo, shredded lettuce, one-third of the dressing, grilled chicken, roasted bell peppers, sun-dried tomatoes, and shredded cheddar. Mix gently to keep everything intact.

5-Finish and serve: Top with diced avocado and drizzle the remaining dressing over the salad. Serve it warm or chilled, depending on what you’re in the mood for the whole process takes just about 40 minutes total.

Notes

🌶️ Make your own Cajun seasoning using smoked paprika, garlic powder, onion powder, oregano, thyme, chili powder, cayenne, kosher salt, and black pepper for deeper flavor.
🥑 Add the avocado just before serving to keep it fresh and prevent browning.
❄️ Leftovers reheat well without lettuce; add fresh lettuce and a sprinkle of Parmesan before serving again.
