3 lbs. Yukon Gold potatoes, washed, peeled, and cut into 1–2 inch cubes

Kosher salt, to taste

8 tablespoons unsalted butter

2 tablespoons all-purpose flour

3/4 cup heavy cream

3/4 cup whole milk

1 cup finely grated Parmesan cheese

White pepper, to taste

Fresh chives, thyme, or similar herbs for garnish


Instructions

1-Add the cubed potatoes to a large pot of cold water and rinse until the water runs clear. Then, cover with fresh cold water and add a generous pinch of kosher salt. Bring to a boil over medium-high heat, then reduce the heat to simmer until the potatoes are tender, which takes about 15-20 minutes.

2-While the potatoes cook, prepare the Parmesan cream sauce: Melt 8 tablespoons of unsalted butter in a saucepan over medium heat. Whisk in 2 tablespoons of all-purpose flour and cook for 1 minute. Gradually whisk in 3/4 cup heavy cream and 3/4 cup whole milk, bring to a simmer, add 1 cup finely grated Parmesan cheese, and whisk until smooth. Remove from heat once it thickens to a creamy, Alfredo-like consistency.

3-Drain the potatoes and rinse them under hot water for 1 minute to remove excess starch.

4-Pass the warm potatoes through a potato ricer or food mill over the pot. If you don’t have one, a potato masher works as a good alternative to get them smooth.

5-Fold the Parmesan cream sauce into the mashed potatoes. Season with additional kosher salt and white pepper to taste, and garnish with fresh herbs if desired.

6-For a looser consistency, gradually add warm milk until you reach your preferred texture. Serve warm and enjoy the rich flavors.
