Ingredients

– 2-3 boneless skinless chicken breasts, diced Provides lean protein for a satisfying meal

Instructions

1-First, heat olive oil in your pot over medium-high heat. Season the diced chicken with salt, pepper, Italian seasoning, and garlic powder, then cook it for about 5 minutes until it’s mostly done. Set it aside for now to build layers of flavor.

2-Next, sauté the minced onion and garlic in the same pot for 2-3 minutes until they’re soft and fragrant. This step really amps up the taste! Add the marinara sauce and water (fill the empty sauce jar to get the right amount), bring it to a boil, then lower to a strong simmer.

3-Return the chicken to the pot, toss in the pasta, stir well, cover, and cook for 10-15 minutes until the pasta is just right. Stir in the parmesan and a quarter cup of mozzarella, then top with the rest of the mozzarella and cook another 2-3 minutes until it’s all melty and gooey.

4-For a fun twist, think about adding extras like in our chicken pot pie pasta recipe. Finish with garnishes like parsley or basil and a sprinkle of Italian seasoning if you like. This method keeps it all in one pot for minimal cleanup what a win!

Notes

🍳 Use a deep-sided skillet or enameled dutch oven to prevent spills and burning during cooking.
🧀 Add breaded chicken or toasted Italian-style breadcrumbs separately for extra crunch, but this will deviate from the one-pot method.
