Ingredients
1 1/2 cups plain yellow cornmeal
1/2 cup plain flour
1 tablespoon baking powder
2 teaspoons salt
2 eggs
1 (14-ounce) can creamed corn
1/2 cup sour cream
1 cup milk or buttermilk
1/3 cup vegetable oil
1 seeded and finely diced jalapeño pepper
1 bunch chopped green onions (approximately 1 cup)
8 ounces shredded Colby Jack cheese
Instructions
1-Preheat oven: Preheat oven to 350°F (175°C) and grease a 13×9-inch baking dish or a 12-inch cast iron skillet to ensure the cornbread doesn’t stick.
2-In a medium bowl: combine the cornmeal, flour, baking powder, and salt, then set it aside for later use.
3-In a large bowl: whisk together the eggs, creamed corn, sour cream, milk (or buttermilk), and vegetable oil until the mixture is smooth and well-blended.
4-Stir the dry ingredients: from the medium bowl into the wet mixture until just combined, avoiding overmixing to keep the texture light.
5-Fold in the diced jalapeño: chopped green onions, and shredded cheese to add layers of flavor and color.
6-Pour the batter: into your prepared dish or skillet, spreading it evenly for uniform baking.
7-Bake: for 55 to 70 minutes, or until the cornbread turns golden brown and a toothpick inserted in the center comes out clean.
8-Let it rest: in the pan for 15 minutes before cutting to allow the flavors to settle and make serving easier.
