Instructions
1-First, heat 1 tablespoon of olive oil in a large skillet over medium-high heat, then add 45 grams of unsalted butter and let it melt. Add half the 400 grams of sliced mushrooms and cook for 2 minutes, seasoning with half the 1/4 teaspoon salt and 1/8 teaspoon black pepper. Cook for another 2 minutes until theyβre golden, then stir in half the 1 1/2 teaspoons of minced garlic and cook until the mushrooms are fully golden before removing them to a plate.
2-Repeat the process with the remaining mushrooms, adding the rest of the salt, pepper, and garlic midway through. Once done, lower the heat to medium and melt 30 grams of unsalted butter in the same skillet.
3-Building the Gravy Base: Next, add 4 tablespoons of plain flour to the melted butter and stir continuously for about 1 1/2 minutes to cook out that raw taste. Slowly pour in 2 cups of low-sodium beef stock while stirring to keep things smooth whisk if you need to avoid lumps. Let it cook for 3 to 4 minutes until it thickens to a thin-syrup consistency, stirring often to prevent burning.
