Description
π§ Mulberry Muffins bring a burst of sweet and tangy flavor to your table with every bite.
π These moist muffins are perfect for breakfast or snacks, combining fresh mulberries and jam swirls for a delightful treat.
Ingredients
– 2 cups all-purpose flour (plus extra for dusting)
– Β½ teaspoon sea salt
– 2 teaspoons baking powder
– Β½ teaspoon ground cinnamon
– Β½ cup unsalted butter or vegetable/coconut oil
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– Β½ cup coconut milk, whole milk, or buttermilk
– 1 cup fresh mulberries
– ΒΎ cup mulberry jam or other preserves
Instructions
1-First: preheat your oven to 350Β°F and butter and flour a muffin pan or line it with paper liners. In a medium bowl, whisk together the flour, salt, baking powder, and cinnamon to get those dry ingredients mixed just right.
2-Next: cream the butter on medium speed until itβs fluffy, which takes about 1 minute. Add the sugar and beat for another minute, then mix in the eggs one at a time, followed by the vanilla extract for that extra flavor pop.
3-Alternate adding the flour mixture and milk in batches, stirring just until combined to keep the batter light. Toss the mulberries with a little flour to stop them from sinking, then gently fold them into the mix.
4-Spoon the batter into the muffin cups, filling each about three-quarters full thatβs roughly ΒΌ cup per cup. Make a small hole in the center of each and add 1 tablespoon of jam, swirling it in for a surprise burst of fruitiness.
5-Bake for about 30 minutes or until a toothpick comes out clean. Let the muffins cool for 10 to 15 minutes before taking them out of the pan. For variations, remember tips like using vegetable oil for moister results or blackberries if mulberries are scarce.
Notes
π’ Use vegetable oil or a mix of butter and oil for moister muffins.
π Substitute applesauce for part of the butter or oil to reduce calories.
π If mulberries are unavailable, blackberries make a great substitute.
