Ingredients

4 boneless, skinless chicken breasts (68 oz each)
1 cup shredded mozzarella cheese
4 oz softened cream cheese
1 tablespoon ranch seasoning mix
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and black pepper to taste
1 tablespoon olive oil
Optional: 8 slices bacon
Fresh parsley for garnish


Instructions

1. Preheat oven to 375°F (190°C).
2. Cut a pocket in each chicken breast without slicing all the way through.
3. In a bowl, combine mozzarella, cream cheese, ranch seasoning, garlic powder, and onion powder.
4. Stuff the cheese mixture evenly into each chicken pocket and secure with toothpicks if needed.
5. Season the outside of each chicken breast with salt and black pepper.
6. If using bacon, wrap two slices tightly around each stuffed chicken breast and secure with toothpicks.
7. Heat olive oil in an oven-safe skillet over medium-high heat.
8. Sear each chicken bomb for 2-3 minutes per side until bacon is crisp and exterior is golden.
9. Transfer skillet to oven and bake for 20-25 minutes until chicken reaches 165°F (74°C) and cheese is melted.
10. Optionally, broil for 1-2 minutes for a crispier finish, watching carefully to avoid burning.
11. Remove toothpicks before serving and garnish with fresh parsley.
