1/3 cup vegetable oil, canola oil, or melted coconut oil

1/3 cup unsweetened smooth applesauce

1 teaspoon orange zest (optional)

1/3 cup orange juice or pineapple juice

1 teaspoon pure vanilla extract

2 cups shredded carrots (about 4 large)

1 cup shredded or grated apple (about 1 large)

1/2 cup raisins

1/2 cup unsalted chopped pecans


Instructions

1-First, preheat the oven to 425Β°F (220Β°C) and prepare your muffin pans with nonstick spray or liners to keep things from sticking.

2-In a large bowl, whisk together the dry ingredients: 2 cups whole wheat flour, 2 teaspoons baking soda, 2 teaspoons ground cinnamon, 1/2 teaspoon ground ginger, 1/2 teaspoon salt, and 1/3 cup ground flaxseed if you’re using it.

3-In another bowl, whisk the wet ingredients until smooth: 3 large eggs at room temperature, 1/2 cup packed brown sugar, 1/4 cup honey, 1/3 cup oil, 1/3 cup applesauce, 1 teaspoon orange zest if desired, 1/3 cup orange or pineapple juice, and 1 teaspoon vanilla extract.

4-Stir the shredded carrots and grated apple into the wet mixture for added moisture and flavor.

5-Gently combine the wet ingredients with the dry ones, mixing just until no flour pockets remain to keep the batter light.

6-Fold in 1/2 cup raisins and 1/2 cup chopped pecans for that extra crunch and sweetness.

7-Spoon the batter into the muffin liners, filling each one to the top for nicely rounded muffins.

8-Bake at 425Β°F for 5 minutes, then lower the heat to 350Β°F (175Β°C) and bake for another 18 minutes or until a toothpick comes out clean.

9-Let the muffins cool in the pan for 10 minutes before moving them to a wire rack.
