Instructions

1-Preheat your oven: Start by preheating your oven to 400°F (about 200°C) and lining a baking sheet with parchment paper or spraying it with non-stick cooking spray for easy cleanup.

2-Prepare the potatoes: First, wash and quarter 1 1/2 pounds of petite red potatoes to ensure they’re ready for seasoning. Then, in a bowl, coat the potatoes with a mixture of 2 tablespoons olive oil, 1 1/2 teaspoons salt, 1/2 teaspoon chili powder, 1/2 teaspoon oregano, 1/4 teaspoon coriander, 1/4 teaspoon garlic powder, 1/4 teaspoon freshly ground black pepper, and a pinch of cayenne pepper for that perfect kick. Arrange the coated potatoes evenly on the prepared baking sheet to allow for good air circulation this helps them get extra crispy!

3-Bake the potatoes: Next, sprinkle 1/2 cup of freshly grated Parmesan cheese over the top. Bake for 20 minutes, then flip the potatoes for even browning. Continue baking for another 20 minutes until they’re golden and crunchy.
