Description

πŸͺ Meringue Shell Cookies (Rakushki) offer a delightful combination of crisp meringue and soft, nutty centers, perfect for festive occasions.
🌰 These lightly sweetened treats are easy to make and ideal for gifting or enjoying with tea during holidays.

Ingredients

– 1 cup unsalted butter Provides the rich base for the dough.

– 1/2 cup sour cream Adds moisture and tang to balance the sweetness.

– 3 room-temperature egg yolks Helps bind the dough together for a smooth texture.

– 2 1/2 cups all-purpose flour Forms the structure of the cookie base.

– 3 room-temperature egg whites Whipped to create the light, airy meringue.

– 3/4 cup granulated sugar Sweetens the meringue and helps it hold its shape when beaten into stiff peaks.

– 1 1/2 cups walnut pieces Used to fill each cookie, with about 3 pieces per treat for that nutty crunch.

Instructions

1-Preheat your oven: Start by preheating your oven to 350Β°F and lining a baking sheet with parchment paper to avoid any sticking issues.

2-Mix the dough: Mix the butter, egg yolks, and sour cream in a bowl until smooth, then add 2 cups of flour and gradually mix in the remaining 1/2 cup until the dough isn’t sticky anymore.

3-Prepare the meringue filling: Separately, beat the egg whites with sugar until they form stiff peaks for that perfect meringue filling.

4-Shape the cookies: Divide the dough into four logs, cut each into 15 pieces, roll them into balls, and flatten into 2-inch circles.

5-Assemble the cookies: Place a teaspoon of meringue in the center of each circle, fold it twice, lay it on its side, and top with three walnut pieces.

6-Bake: Bake them for 25 to 30 minutes until the edges turn golden brown, then let them cool before dusting with powdered sugar.

Notes

πŸ“ Measure flour by spooning into cup and leveling for accuracy.
πŸŽ‚ Use a piping bag for precise meringue placement in the cookie centers.
πŸ₯œ Make dough ahead of time and keep refrigerated for convenience during baking.
