Description

🌮 Experience the vibrant and bold flavors of this Vegetarian Taco Soup, packed with fresh vegetables and hearty beans for a nutritious meal.
🥑 This recipe offers a quick and satisfying way to enjoy classic taco spices in a comforting, meat-free soup that’s perfect for any day.

Ingredients

Scale

2 cans (15 oz each) diced tomatoes

1 can (15 oz) black beans

1 can (15 oz) pinto beans

2 cups vegetable broth

1 cup water

1 cup corn (fresh, frozen, or canned)

1 packet taco seasoning

1 diced avocado

1/2 cup feta cheese or queso fresco

Shredded cheddar cheese

Tortilla strips

Fresh cilantro

Sour cream

Greek yogurt (optional)

Instructions

1-Start with the tomatoes: In a large pot, cook the diced tomatoes over medium heat. This helps to release their juices and begin developing the flavor base of the soup.

2-Add the beans: Rinse and drain the black beans and pinto beans thoroughly, then add them to the pot. Rinsing canned beans removes excess sodium and helps reduce any potential digestive discomfort.

3-Create the broth base: Pour in the vegetable broth and water, then stir to combine all ingredients. The combination creates a rich, flavorful liquid that brings everything together.

4-Add vegetables and seasoning: Add the corn and taco seasoning to the pot. The corn adds sweetness and pops of color, while the taco seasoning provides that authentic flavor we all love.

5-Simmer to perfection: Cook over medium-low heat for 15 minutes until heated through. This allows all the flavors to meld together while preserving the texture of the vegetables.

6-Prepare toppings while waiting: While the soup is cooking, prepare your toppings. Dice the avocado, shred the cheese, chop the cilantro, and get your tortilla strips ready. This makes serving quick and easy once the soup is done.

7-Serve and enjoy: Serve the soup in bowls with your desired toppings. Let everyone customize their bowl with their favorite toppings for a fun, interactive dining experience.

Notes

🥑 Add fresh toppings like avocado, feta, and cilantro just before serving as they do not store well.
❄️ Allow the soup to cool before refrigerating or freezing to maintain food safety.
🌶️ Customize the spice level by using homemade taco seasoning and substitute beans or corn to your preference.
