1 cup shredded cheddar cheese

1 large egg

1/4 cup (about 15 g) chopped fresh chives

1/4 cup (30 g) all-purpose flour

1/2 teaspoon garlic powder

Salt and freshly ground black pepper to taste

1/2 cup (45 g) grated Parmesan cheese

Cooking spray or butter, for greasing the mini muffin pan

Optional: 1/4 cup (30 g) cooked bacon or ham, diced

Optional: sour cream for serving


Instructions

1-Prepare mashed potatoes: Boil peeled potatoes until tender, then mash them smooth. For vegan versions, use plant-based milk and butter substitutes.

2-Mix ingredients: In a large bowl, combine the chilled mashed potatoes with shredded cheddar cheese, flour, egg (or flax egg), chopped chives, garlic powder, salt, and pepper. Mix thoroughly until well incorporated and sticky enough to shape.

3-Preheat oven: Heat your oven to 375°F (190°C) and grease a mini muffin pan with cooking spray or butter to prevent sticking.

4-Shape puffs: Use your hands or a cookie scoop to form about 1-inch balls from the mixture. Roll each ball in the grated Parmesan cheese to coat evenly.

5-Arrange and bake: Place the coated balls in the muffin pan cups, pressing slightly to form shape. Bake for 20-25 minutes, turning halfway through, until golden brown and crispy on the edges.

6-Cool and serve: Remove from oven and allow puffs to cool for a few minutes before carefully removing from the pan. Serve warm with optional sour cream or other dips.
