Ingredients
– 4 skinless salmon fillets (6 ounces each)
– ½ cup sun-dried tomatoes (chopped)

– Salt and pepper to taste

Instructions
1-Preheat and prep: Set oven temperature to 400°F (200°C). Chop garlic and sun-dried tomatoes, and grate Parmesan cheese. Pat dry the salmon fillets and season evenly with salt, pepper, Italian seasoning, and optional garlic powder and red pepper flakes.
2-Sear salmon: Heat olive oil in an ovenproof skillet over medium-high heat. Sear the salmon skin-side down for about 4 minutes until crispy. Flip and cook for another 2 minutes.
3-Sauté aromatics: Temporarily remove salmon from the pan. In the same skillet, melt butter, then sauté minced garlic for about 30 seconds until fragrant. Add sun-dried tomatoes and cook for an additional minute.
4-Create sauce: Stir in flour to make a roux, cooking briefly. Gradually whisk in chicken broth (or seafood substitute) and heavy cream. Bring sauce to a simmer and cook until slightly thickened.
5-Finish sauce: Add Parmesan cheese, Italian seasoning, lemon zest, and optional lemon juice. Season with salt and pepper, simmering until creamy and thickened.
6-Bake fillets: Return salmon to the skillet, spoon sauce over fillets. Transfer skillet to the oven and bake for 6-8 minutes until salmon is cooked through but still moist.
7-Plate and serve: Rest salmon briefly after baking. Garnish with fresh basil or parsley if desired. Serve warm, ideally over pasta, rice, quinoa, or cauliflower rice.
