Ingredients

– 2 cups raw pecan halves (with optional substitutions including almonds, walnuts, pistachios, cashews, peanuts, or other nuts)

– 1/2 cup 100% pure maple syrup

– 1 1/2 teaspoons ground cinnamon (or other warming spices such as ginger, nutmeg, allspice, cloves, or pumpkin pie spice)

– 1/2 teaspoon fine sea salt

– 1/8 teaspoon ground cayenne pepper (adjustable for desired spiciness)


Instructions

1-Getting maple candied pecans right: Start by combining all the ingredients in a medium sauté pan and stir until the pecans are evenly coated and the spices mostly dissolve into the maple syrup. This initial mixing ensures every pecan gets a good covering of that sweet and spicy goodness.

2-Next, heat the mixture over medium until the syrup reaches a gentle simmer with bubbles, taking care to avoid vigorous boiling which could burn the nuts. Once it simmers, reduce the heat to medium-low to maintain a low simmer and cook for 20 to 25 minutes, stirring frequently to prevent sticking. As it cooks, the syrup will change from a thin liquid to a thick syrup, and finally to a crystallized, grainy texture that’s just right for that signature crunch.

3-When crystallization begins, keep cooking and stirring for an additional minute to finish it off perfectly. Immediately spread the candied pecans onto a parchment-lined baking sheet, breaking apart any clumps and evenly distributing them for even cooling. Allow them to cool completely at room temperature, and you’ll have about 2 cups of delicious treats ready to enjoy.
