– the zest and juice of 1 small lemon

– salt (for seasoning)

– black pepper (for seasoning)


Instructions

1-Start by rinsing 1 1/2 cups of red lentils under cold water until the water runs clear, which helps remove any starch and ensures a smoother soup. In a large pot, heat 1 tablespoon of olive oil over medium heat and add 1 medium diced white onion, 2 diced medium carrots, and 5 minced garlic cloves. Sautรฉ these vegetables for about 5 minutes until they soften and release their aromas.

2-Next, stir in 2 teaspoons of ground cumin, 1 teaspoon of curry powder, and a pinch each of cayenne and saffron if youโ€™re adding them for that extra kick. Pour in 6 cups of vegetable or chicken stock and bring the mixture to a boil.
