Ingredients

– 1.2 kg potatoes (such as Desiree, Yukon Gold, or Maris Piper), cut into thick wedges

– 1.5 cups low sodium chicken stock

– 0.5 cup olive oil provides healthy fats for roasting

– 0.33 cup lemon juice adds vitamin C and bright flavor

– 5 finely grated garlic cloves

– 1 tablespoon dried oregano

– 2 teaspoons salt


Instructions

1-Begin by cutting 1.2 kg of potatoes, like Desiree or Yukon Gold, into thick wedges for the best texture.

2-In a roasting pan, mix the potato wedges with 1.5 cups of low sodium chicken stock, 0.5 cup of olive oil, 0.33 cup of lemon juice, 5 finely grated garlic cloves, 1 tablespoon of dried oregano, and 2 teaspoons of salt. Coat everything thoroughly so each piece soaks up the flavors.

3-Roast the potatoes for 20 minutes, then turn them to ensure even cooking.

4-Continue roasting for another 25 to 30 minutes until most of the liquid is absorbed, giving you tender insides with a start of crispiness.

5-Optionally, move the potatoes to another tray, drizzle with any leftover oil, and roast for 35 to 40 minutes more until the edges are golden and crispy.

6-While the potatoes finish, pop the original pan back in the oven for 5 to 10 minutes to reduce the juices, then drizzle them over the potatoes before serving. Garnish with lemon wedges and fresh oregano leaves for a fresh pop.
