Ingredients
1 cup all-purpose flour
3/4 teaspoon baking soda (or 2 teaspoons baking powder)
1/4 teaspoon salt
1 cup (2 sticks) butter, softened
1 1/3 cups granulated sugar, divided
1 teaspoon lemon extract (optional)
Grated zest from 1 medium lemon (about 2 teaspoons)
1 1/2 cups old-fashioned rolled oats
2 large eggs (optional)
Optional additions: 3 tablespoons lemon juice, white chocolate chips (up to 2 cups), or lemon pudding mix (3.4 oz)
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
2. Whisk together flour, baking soda (or powder), and salt in a medium bowl.
3. Beat butter and 1 cup sugar until light and creamy, about 4-5 minutes.
4. Add lemon extract, lemon zest, and lemon juice if using; beat until combined.
5. Gradually mix in dry ingredients until just combined.
6. Stir in oats and any optional additions.
7. If using, beat in eggs after creaming butter and sugar.
8. Scoop dough with tablespoon-sized scoop, roll into balls, and place 2–2 1/2 inches apart on sheets.
9. Dip bottom of glass in water then sugar and gently press dough balls flat.
10. Bake for 9–12 minutes until edges are golden but centers remain soft.
11. Cool on sheets briefly, then transfer to wire racks to cool completely.
