Description

πŸ‹ Enjoy a luscious Lemon Chantilly Parfait that combines creamy citrus layers with fresh, vibrant fruits.
πŸ“ This elegant dessert is light yet indulgent, perfect for a refreshing treat any time of day.

Ingredients

Scale

4 oz (110 g) softened cream cheese

2/3 cup (60 g) powdered sugar

2/3 cup (160 ml) heavy cream

1 teaspoon pure vanilla extract

1/2 cup lemon curd

1/2 cup raspberries

1/2 cup blueberries

2 peeled kiwis cut into small pieces

2 cups heavy cream for the rich Chantilly base

Zest and juice of 2 lemons to add that fresh, tangy flavor

1 cup crushed ladyfingers or sponge cake for texture and base

Instructions

1-Gather all ingredients and prepare your work area; zest and juice the lemons, and crush the ladyfingers or alternative base to get things started.

2-Whip the heavy cream with powdered sugar until soft peaks form; if you’re going vegan, whip coconut cream until it’s fluffy and holds shape.

3-Gently fold in the lemon zest, juice, softened cream cheese, and pure vanilla extract into the whipped cream mixture, adjusting sweetness as needed for that perfect balance.

4-Layer the crushed ladyfingers or gluten-free base in serving glasses or bowls to create a sturdy foundation.

5-Spoon a layer of the lemon Chantilly cream over the base, then add layers of lemon curd, raspberries, blueberries, and kiwis for a colorful mix.

6-Repeat the layers until the glass is filled, ending with a topping of fresh fruits for a visually appealing finish.

7-Chill the parfaits in the refrigerator for at least 2 hours to let the flavors blend and the cream set nicely.

Notes

πŸ‹ Use fresh lemon curd for the best citrus flavor.
πŸ₯„ Fold the whipped cream gently to keep the Chantilly light and airy.
πŸ“ Chill the parfaits well to allow the layers to set and blend flavors beautifully.
