Ingredients
12 oz linguine
6 Tbsp unsalted butter
2 Tbsp lemon zest
3 cloves garlic [finely grated]
½–¾ cup reserved pasta-cooking water
⅔ cup grated Parmesan cheese
1–2 Tbsp fresh lemon juice
1 tsp kosher salt
¾ tsp freshly ground black pepper
¼ cup chopped fresh parsley
extra grated Parmesan [for garnish]
Instructions
1-Bring a large pot of salted water to a boil and add the linguine, cooking until al dente, which takes about 9-11 minutes. Don’t forget to reserve some of the cooking water before draining it’s a game-changer for the sauce.
2-While the pasta is cooking, melt the butter in a wide skillet over medium heat. Add the lemon zest and grated garlic, sautéing for 1-2 minutes until it smells amazing, but make sure the garlic doesn’t brown.
3-Add the hot linguine to the skillet along with ½ cup of the reserved pasta water, then toss everything together. Stir in the Parmesan, 1 Tbsp lemon juice, salt, and pepper, cooking for 1-2 minutes until the sauce thickens and coats the noodles nicely. If it seems too thick, add a bit more pasta water or lemon juice.
4-Remove from the heat, mix in the chopped parsley, and adjust seasoning as needed. Serve right away with extra Parmesan on top for that final touch of goodness.
