Ingredients
– 1 pound fresh jalapeños, stems removed
– 12 cloves garlic, unpeeled
– 1/4 cup avocado oil or another mild-flavored oil
– 1 to 2 tablespoons fresh lime juice (optional)
– 1 1/2 teaspoons fine sea salt
Instructions
1-Boil the jalapeños and 11 cloves of garlic in enough water to cover them, simmering for 15 to 20 minutes until softened.
2-Reserve 1 cup of the jalapeño cooking water, then drain. Slice the jalapeños in half lengthwise and remove veins and seeds for a milder salsa. Peel the cooked garlic and one raw clove.
3-Blend the cored jalapeños, cooked garlic, raw garlic, oil, lime juice (if using), sea salt, and 1/4 cup of the reserved cooking water until smooth. Add more cooking water to achieve the desired consistency.
4-Adjust salt and lime juice to taste.
5-Serve immediately for dipping or drizzling.
