Ingredients

– 1 lb. (approximately 10-11 medium) jalapeno peppers

– 1/2 an onion

– 2 garlic cloves

– 3/4 cup white vinegar

– 1/2 cup water

– Juice of 1 lime

– 1/2 teaspoon salt

– 1 teaspoon Mexican oregano

– 1/4 teaspoon cumin (optional)

– 8-10 cilantro sprigs

– Freshly cracked black pepper (to taste)


Instructions

1-First, rinse and de-stem the jalapenos, then thoroughly wash your hands to avoid any irritation.

2-Next, sautΓ© the roughly chopped onion and whole peeled garlic cloves in oil over medium heat until the onion starts to brown.

3-Add the oregano, black pepper, and cumin (if using) and cook briefly until fragrant.

4-Stir in the jalapenos, vinegar, water, and salt, then bring to a simmer.

5-Transfer the mixture to a blender, add the cilantro and lime juice, and blend to the desired consistency, either chunky or smooth.
