Description

Ingredients

– 12 medium to large jalapeno peppers, halved and seeded

– 1 ½ cups shredded cheddar cheese, divided

– ½ cup fresh or frozen corn, sautéed until caramelized

– 3 ounces cooked and diced bacon

– BBQ sauce for serving

– ¾ cup yellow cornmeal

– ¼ cup all-purpose flour (gluten-free option available)

– 1 teaspoon baking powder

– ½ teaspoon salt

– ¼ teaspoon baking soda

– ¾ cup buttermilk

– 1 egg, lightly beaten

– 2 tablespoons melted shortening


Instructions

1-Preheat the oven: Preheat the oven to 425°F (220°C) to get everything set for baking.

2-Prepare the jalapenos: Prepare the jalapenos by halving and seeding them, then shred the cheese, sauté the corn until it’s caramelized, and cook and dice the bacon.

3-In a bowl: mix the dry ingredients for the cornbread: ¾ cup yellow cornmeal, ¼ cup all-purpose flour, 1 teaspoon baking powder, ½ teaspoon salt, and ¼ teaspoon baking soda.

4-Add 1 egg: (lightly beaten), ¾ cup buttermilk, and 2 tablespoons melted shortening to the dry ingredients, and stir until combined.

5-Stir in ¾ cup of shredded cheddar cheese, the sautéed corn, and the diced bacon into the cornbread batter for that extra flavor boost.

6-Arrange the jalapeno halves on a parchment-lined baking sheet to make filling easier.

7-Spoon 1 to 2 tablespoons of the cornbread batter into each jalapeno half.

8-Top each one with the remaining shredded cheddar cheese.

9-Bake for 15 to 20 minutes until the cornbread is firm and the cheese is melted and golden.

10-Serve warm with BBQ sauce for a delicious finish.
