Ingredients

– 1 bag of tortilla chips shaped like scoops

– 225 grams (8 ounces) of softened cream cheese

– 1 cup (about 100 grams) of shredded mozzarella cheese

– 1 large egg

– 1 cup of canned sweet corn

– 2 tablespoons of canned green chiles (mild or medium)

– 1/2 teaspoon of garlic powder

– 1/4 teaspoon of salt

– 1/4 teaspoon of black pepper

– Grated parmesan cheese for topping (approximately 1/4 cup)


Instructions

1-First Step: Preheat your oven to 220°C (425°F). Grease or line baking sheets to prevent sticking and ensure even baking.

2-Second Step: Arrange the tortilla chips cup side up on the baking sheet for easy filling.

3-Third Step: In a bowl, combine the softened cream cheese, shredded mozzarella, egg, corn, green chiles, garlic powder, salt, and pepper to create the filling. Mix thoroughly until smooth.

4-Fourth Step: For vegan adaptation, substitute shredded jackfruit or chickpeas instead of chicken, and use plant-based cheeses to maintain texture and flavor.

5-Fifth Step: Scoop about 1 tablespoon of the filling into each chip, then sprinkle grated parmesan cheese over the top for a crispy finish.

6-Final Step: Bake for 13 to 15 minutes until the bites are golden and bubbling. Let them cool slightly before serving to keep that optimal crunch.
