Instructions
1-First, mix all the marinade ingredients in a large bowl: 3/4 cup canned or bottled unsweetened pineapple juice, 1 1/2 tablespoons freshly grated ginger, 1 1/2 tablespoons freshly grated garlic, 1/2 cup tomato ketchup or tomato sauce, 1/2 cup soy sauce, 1/4 cup sherry or an alternative, 1/4 cup brown sugar, 1 tablespoon Sriracha, 2 tablespoons rice vinegar, and 1 tablespoon toasted sesame oil. Reserve 3/4 cup of this mix for basting, then pour the rest over 1.5 kg of chicken in a non-metal container for even soaking.
