Instructions

1-First, preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper. In a small saucepan or microwave-safe bowl, gently warm the honey until it becomes liquid and easy to mix, then stir in the cayenne pepper or chili powder. Toss the raw cashews in the honey-chili mixture to coat them thoroughly and spread them evenly on the prepared baking sheet.

2-Roast the cashews for 10 to 15 minutes, stirring after 5 minutes to ensure even browning. Remove them from the oven when they turn golden and slightly darkened, taking care not to burn them. While the cashews cool for about 5 minutes, mix the coconut sugar with sea salt, then toss the cashews in this mixture to keep them from sticking. Let them cool completely before storing, which takes roughly 15 to 20 minutes total with prep and cook time.
