Ingredients

– ½ cup (1 stick) unsalted butter

– 1 ½ cups cornmeal, medium-grind or finer

– 1 ½ cups whole wheat flour or all-purpose flour

– 1 ½ teaspoons fine sea salt

– 2 teaspoons baking powder

– ½ teaspoon baking soda

– 3 large eggs, at room temperature

– ⅔ cup honey or maple syrup

– 1 ½ cups milk of choice (regular cow’s milk, almond, oat milk, etc.), at room temperature

– Optional: additional butter, honey, or jam for serving


Instructions

1: Preheat oven to 375°F (190°C). Place butter in a large 12-inch cast iron skillet and put it in the oven to melt and brown lightly, about 5 to 13 minutes, taking care not to burn it.

2: In a large bowl, combine cornmeal, flour, salt, baking powder, and baking soda; stir and set aside. In another bowl, whisk eggs with honey until blended, then add milk and whisk to combine.

3: Pour the liquid mixture into the dry ingredients and stir just until moistened. Remove skillet with browned butter from the oven carefully and swirl to coat the sides.

4: Pour the browned butter into the batter and stir until combined, then pour the batter into the hot skillet.

5: Bake for 25 to 30 minutes until the edges are browned, the top is springy to the touch, and a toothpick inserted comes out with a few crumbs. Let cool for 5 minutes before slicing. Serve with additional butter, honey, or jam if desired.

6: Store cornbread in a sealed container at room temperature up to 3 days, refrigerate up to 1 week, or freeze up to 3 months. Reheat gently before serving.
