Description

Ingredients

– 4 tablespoons butter

– ½ cup plus 2 tablespoons flour

– 2 cups chicken broth

– 1 chicken bouillon cube or 1 teaspoon bouillon paste (optional)

– 1 cup milk (preferably whole; any type can be used)

– ⅓ teaspoon celery salt

– ⅓ teaspoon onion powder

– ⅓ teaspoon garlic powder

– ⅓ teaspoon salt

– ⅓ teaspoon pepper


Instructions

1-Melt the butter in a saucepan over medium heat until it’s fully melted and foaming, which takes about 3 minutes.

2-Gradually whisk in the flour continuously for 3 to 5 minutes until the mixture looks like wet sand, helping to remove the raw flour taste.

3-Remove from heat and slowly whisk in one-third of the chicken broth, then add another third and mix well before adding the rest.

4-Stir in the bouillon if you’re using it, along with the warm milk that’s been tempered by microwaving for about 45 seconds, and all the seasonings, while whisking continuously.

5-Return the mixture to medium-high heat and whisk until it thickens and nearly boils, then take it off the heat right away. The soup will get thicker as it cools, and for a smoother texture, strain it through a fine mesh strainer.

Notes

🥄 Whisk continuously during cooking to avoid lumps and achieve smooth consistency.
