Description

🌽 Hoe cakes provide a quick and flavorful Southern-style cornbread alternative that’s perfect for any meal.
🍴 Quick to prepare and deliciously crispy, these fried Johnny cakes are sure to satisfy comfort food cravings.

Ingredients

– 1 cup cornmeal (preferably finely ground for smooth texture)

– 1 cup all-purpose flour (can substitute self-rising flour; if using all-purpose, add 1Β½ teaspoons baking powder and Β½ teaspoon salt)

– 2 to 2Β½ teaspoons baking powder (optional if using self-rising flour)

– 2 tablespoons granulated sugar (optional)

– 1 teaspoon salt

– 2 to 3 large eggs

– ΒΎ cup buttermilk or whole milk (homemade buttermilk made by adding 1 tablespoon white vinegar or lemon juice to 1 cup milk and resting 5 minutes)

– β…“ to Β½ cup water (to adjust batter consistency)

– β…“ cup melted butter, slightly cooled (or unsalted melted butter)

– 2 to ΒΌ cup frying oil such as vegetable oil, peanut oil, or flavorful bacon grease

Instructions

Mix Dry Ingredients: In a large bowl, whisk together 1 cup cornmeal, 1 cup all-purpose or self-rising flour, 2 to 2Β½ teaspoons baking powder (if needed), 2 tablespoons sugar (optional), and 1 teaspoon salt until combined.

Add Wet Ingredients: Create a well in the center and add 2 to 3 large eggs, ΒΎ cup buttermilk (or milk substitute), β…“ to Β½ cup water, and β…“ cup melted butter. Gently stir until just combined, avoiding overmixing to maintain a light, thick batter.

Heat the Skillet: Warm 2 tablespoons of vegetable oil, peanut oil, or bacon grease in a 12-inch cast iron or heavy skillet over medium to medium-high heat, ensuring even heat distribution for crisp edges.

Cook Hoe Cakes: Using a 2 to 3 tablespoon scoop (or up to Β½ cup for larger cakes), drop batter onto the hot skillet, forming small rounds. Cook 3 to 4 cakes at a time without crowding.

Fry Until Golden: Cook for 2 to 3 minutes until edges bubble and turn golden brown. Flip carefully and cook the other side until equally golden and cooked through.

Drain and Serve: Remove cakes onto paper towels to absorb excess oil if desired, and serve immediately while hot, optionally with vegan butter, maple syrup, or savory accompaniments.

Notes

πŸ₯˜ Use a cast iron or heavy skillet to get evenly crispy, golden edges every time.
πŸ₯“ Frying in bacon grease adds delicious Southern richness and depth of flavor.
πŸ”₯ Serve immediately for best texture, or keep warm in a low-temperature oven for a short time.
